Located in South Africa’s Stellenbosch wine region behind the Simonsberg mountains, Noble Hill has operated since 1997 as a custodian of historic vineyards. The estate draws from three centuries of winemaking tradition in the area, producing wines that honour both the land’s heritage and sustainable agricultural practices.

Sustainable Stewardship

Noble Hill embraces a regenerative farming philosophy throughout its operations. By avoiding pesticides, herbicides, and synthetic chemicals, the estate maintains biodiversity and ecological balance.

Winemaking: Elegance and Finesse

Under winemaker Kristopher Tillery’s direction, the estate creates wines that emphasise elegance and restraint. The signature Sur lie Chenin Blanc undergoes natural fermentation in clay amphorae and concrete tanks, developing delicate citrus aromas and a distinct granite minerality. Tim Atkin awarded it 91 points.

The portfolio also includes Mourvèdre, Syrah, and Cabernet Sauvignon expressions — each reflecting the estate’s unhurried, site-driven approach.

Cosecha Restaurant

Noble Hill operates Cosecha Restaurant, offering Latin cuisine featuring responsibly-sourced meats and seasonal local produce. Sitting above the vineyard with a glass of the estate’s wine and a menu that takes its ingredients seriously is one of the more complete lunch experiences the Winelands offers.

Visiting

The estate welcomes guests Wednesday through Sunday. Online booking is recommended, particularly for combined wine tour and dining experiences.

Noble Hill is one of those estates that rewards a slow visit — a place where the farming, the winemaking, and the food all pull in the same direction.
